As you take your first bite, close your eyes and imagine you are off the Florida keys in your fishing boat with the splash of ocean air spraying your face, as you battle the 30 pound Mahi at the end of your line.

Calamari



So you have just been seated and brought your drinks. You are deciding what main dish you want, but want something RIGHT NOW!  Well then, may we recommend one from our appetizer list: The Bisbee Grille Calamari!

Karina our cook has come up with a light battered recipe that is delicious and comes with our house sauce for calamari. It snuffs your immediate hunger pangs but will not fill you up. And, Calamari is high in protein and phosphorus and contains traces of calcium, thiamine and riboflavin. Just sayin'

The Cool Choice: Mediterranean Salad

So you have just taken the main street tour, seen the shops, and at 11:00 am it has now crested the 80 degree mark. Luckily you make it back to the Grille and received your iced tea from the waitress. Then you think, “It’s too hot to even eat!” Not so.


On days like these, we have just the thing for hot weather, and that is the Mediterranean salad with grilled or blackened chicken. There’s nothing like the refreshing taste of crisp and cool mixed greens, as the chilling burst of a cherry tomato stings the palate.


Add to this the zesty red onions and pepperoncini covered in Aegean feta dressing and you’ve got it made in the shade. But added to this is the refreshing artichoke hearts and kalamata olives, which are rich in flavor and is a good source of antioxidants. Complimented with our grilled or blackened chicken and this cooling dish will revitalize you for the next trek in Bisbee.

1000 Burgers Sold!


 Some of the greatest ideas are casually discussed over lunch and a beer. At the Bisbee Coffee Company Roaster department, Dan Simonis and entourage met with Rob Page to discuss an idea for the Bisbee Grille Menu. Rob is not quick to just jump into any idea, and is mentally disecting the idea as it is being presented by some hopeful.

As Dan presented his vision of what a Texas Millionaire enjoys in a hamburger, the pieces began to slowly come together for Rob to begin working on Dan's idea with the assistance of his culinary database found on his most private computer.


 After an hour of high speed analysis, Rob printed out the data and went over it with Dan and his wife, Puspa. After going over the logistics, along with back and forth suggestions, it was now time to take it to the kitchen for a series of tests.



They decided on the right burger and decided that they would give a portion to the The Verhelst Recovery House for men. 

Since the premier party for the burger on February 15, 2011, The Bisbee Grille is proud to announce that they have now passed the 1000 burger mark as of May 9, 2011. That is an average of 300 West Texas Millionaire burgers a MONTH!! Gyro plate

Many people across the country and even the globe enjoy the originally Greek food gyros. This form of slow roasted meat served in a pita is a form of Greek fast food. In the United States, we have the hamburger. In Greece, they have the gyro.
In the United States, the food was introduced in 1968 in the Chicago area. Since then, it has spread to the rest of the country. At the Bisbee Grille, the gyro is made of beef and lamb, topped with diced tomatoes, onions lettuce and tzatziki sauce wrapped in warm pita bread.

You are maybe asking, "Tzatziki sauce?" it is traditionally a white sauce that is made of strained yogurt which then has minced cucumbers, garlic, salt, and a variety of seasonings added to it. The yogurt, in Greece at least, is typically made with goat or sheep's milk.The Grille has their own secret recipe that does not use the goat or sheep's milk.
