The meatloaf has European origins; minced meat loaves werecooked already in the 5th century, and were mentioned in the
famous Roman cookery collection "Apicius". Meatloaf is a traditional
German, Belgian and Dutch dish, and it is a cousin to the Italian
meatball.
The Bisbee Grille takes lean ground beef and season it with the house spices. Then
bake it, followed by searing it lightly. Finally we top this with a mellow wine reduction that has a slight BBQ flavor.
The coffee we serve at both The Bisbee Grille and Santiagos is roasted at our own roaster every day and brewed on site. We do not know of any restaurant that does this.
